This cuisine is the native cookery style of the Hyderabadi Muslims. Known as the Deccani cuisine, it is rich in flavors and prepared especially for weddings, parties and festivals. Hyderabad, with a 400 year old culinary history, uses ingredients like coconut, peanuts, tamarind and sesame seeds in preparing its mouthwatering dishes. In this class we will make chicken biryani - a layered rice and chicken dish with bhagare baingan - baby eggplants stuffed with peanuts, sesame seed and grated coconut and Shahi Tukra - a dessert made with toasted bread and condensed milk.
